Dairy/Gluten Free - Sweet & Spicy Chicken

During a recent visit with my specialist, he suggested I try eating gluten free for a week or so to see if maybe I also had a gluten sensitivity.  First thought: "Are you freaking kidding me?!" It's hard enough eating dairy-free, especially with my travels.  But I've tried to be really conscious of eating this way lately and I've gotta say... I feel a WHOLE lot better.  So... though I'm still focused on eating "clean" I've also been eating gluten/dairy-free.  This recipe I found online on one of the many fabulous gluten-free blogs out there (thank goodness for those bloggers!  They have made it so easy for me to attempt the cooking thing.) You can cook it in your crockpot if you have one... which makes it super easy!  And it is DELISH!!! If you're interested in the recipe, let me know and I can send it your way.  The hardest part is finding some of the ingredients in gluten-free format.  Who knew that most sweet & sour sauces had wheat or wheat proteins in them!?
