Gluten/Dairy Free Mac-n-Cheese

So Mac-n-Cheese is one of those foods that I truly have not enjoyed in over a decade due to my dairy allergy.  I really haven't thought of making it (or buying a pre-made version) with soy/rice cheese because... let's face it.  They taste terrible, and smell even worst when they are cooking.  Well... I found a frozen version of Mac-n-Cheese by "Amy's" that was dairy & gluten free.. and on a whim at Wholefoods decided "what the heck!?"  If I don't like it, then its only $3.00 I'm out.  Well... turns out it is DELISH... but also brings with it a fat content of a whopping 21 grams.  No thank you.  In a cooking fury this past weekend I decided to look up a recipe for making my own "cleaner" version of this favorite comfort food (and goodness I needed that after my beloved Saints lost in sudden death overtime).  I was right about the smell... not the ideal thing on a Sunday afternoon... but it was very tasty.  Not the same as the frozen Amy's version.. and definitely not the same as true mac-n-cheese... but for me it works and doesn't make me sick so its a win-win.  The photo doesn't look as appetizing as it is... but then again its fake cheese so what can I say!?
