Quinoa-Banana Muffins
Ok - on this dairy/gluten-free kick... I decided to try something completely different. Quinoa is supposed a fantastic vegan way of getting protein.. and is diverse enough to be prepared for all sorts of meals including breakfast and desserts. I've eaten it as a side-dish before and it was tasty enough... and with some very over-riped bananas I decided to make Quinoa-Banana Muffins. Gotta say... I wasn't sure how they would turn out but I surprised myself and they were very tasty. So this week I'll be starting each day with a high-protein packed muffin... and maybe considering adding "Cooking/Baking" to my FaceBook list of hobbies. On second thought - Nahhhhh.
