Clean Cooking: Miso Soup, Mochi Dumplings and Mixed Berry Couscous Cake
If you are following this blog, or just know me well, you will know I'd rather find a fabulous restaurant that provides amazing "clean" meal options as opposed to be spending time in the kitchen. Some people find cooking to be therapeutic or even sexy. I'm not one of those people. There's not a whole lot that I enjoy about cooking other than the comfort I get in knowing I won't have an allergic reaction to whatever it is I'm about to eat because I know 100% there isn't an ounce of dairy in it. And even that isn't all too big a deal now that I've identified some fabulous dairy-free options in all of the locations I either live or travel to often.
So today Fl found itself under a consistent downpour so it was decidedly an "indoor" day.. so instead of being "lazy" I decided to head to Wholefoods and cook a few clean meals for the week (since I'm actually in town all week - which is amazing in and of itself). I decided to make Mochi Dunplings, Miso Soup and Mixed Berry Couscous Cake (all from the CLEAN FOOD cookbook). I also made homemade turkey meatballs and Ezekiel pasta for the week, but I've mastered that dish so it's not a "new" experience.
The Mochi Dumplings were fairly simple, though the mochi didn't puff correctly.. it was sorta a lopsided ooze of the mochi off to one side. But I got creative and made it work. I did forget to put the tamari into the stuffing... so the taste is a little more bland than hoped. Oh well.. less sodium for me!
The Miso Soup was fairly simple to make and though I'm not a huge fan of miso soup, I know its full of beneficial enzymes and all the medicinal benefits that come from the sea veggies, miso and tofu. So I eat it and will just remind myself of that.
The Mixed Berry Couscous Cake didn't exactly turn out the way I had hoped, and without having a photo in the cookbook, I didn't know what to expect. But it was tasty and its clean, so it works for me.
Now I'm all set for the week... a few hours later. Still not a fan of cooking but I'm proud of myself for making this 3-course meal for the week. If you want to check out the cookbook, its called: "CLEAN FOOD: A Seasonal Guide to Eating Close to the Source" by Terry Walters.
Ok... so Miso looks like dog poop... this was not very appetizing to prepare! LOL
